You expect food to release easily from a nonstick pan so when it doesn’t, frustration sets in fast. The good news? Sticking doesn’t automatically mean your pan is damaged or worn out. In most cases, it’s the result of heat control, residue buildup, or small technique issues that are easy to correct.
The Most Common Reasons Food Sticks
1. Residue Buildup on the Surface
Over time, oils and fats can leave behind a thin, invisible film. This residue interferes with the nonstick surface and is the most common cause of sticking.
What to do:
-
Wash the pan thoroughly after every use with warm to hot water and mild dish soap
-
Use a soft sponge or brush.
-
If buildup persists, gently clean with warm water and baking soda, then rinse and dry.
-
A proper clean often brings nonstick performance right back.
2. Cooking at Too High a Temperature
Nonstick cookware is designed to work efficiently at low to medium heat. Excessive heat can cause food to grab onto the surface instead of releasing cleanly.
What to do:
-
Preheat the pan on medium heat for about 60–90 seconds
-
Avoid high heat unless specifically required
-
Let food cook undisturbed before flipping
-
Lower heat = better release and better results.
3. Using the Wrong Amount (or Type) of Fat
Too much oil or relying on aerosol sprays can contribute to residue buildup, while too little fat can make food more likely to stick.
What to do:
-
Skip cooking sprays
-
Use a small amount of liquid oil or butter
-
Add oil once the pan is preheated and swirl to coat evenly
4. Adding Cold Food Straight from the Refrigerator
Cold proteins are more likely to stick when they hit a warm pan.
What to do:
-
Let proteins sit at room temperature for 10–15 minutes
-
Pat dry before cooking
-
This helps promote even browning and easier release.
What’s Not the Problem
✔ Metal utensils — SCANPAN nonstick surfaces are metal-utensil safe
✔ Rinsing with cool water after cooking, our cookware won’t warp
✔ Everyday, real-world cooking
If food sticks, it’s almost always technique or cleanliness - not damage.
Nonstick performance isn’t just about the pan, it’s about how it’s used and cleaned. With proper heat, the right amount of oil, and regular cleaning, your cookware is designed to deliver consistent release and reliable results, meal after meal.
Sometimes, the fix is simpler than you think.
