Ingredients:

4 cups vegetable broth

4 cups butternut squash, peeled and cubed

½ diced onion

2 tablespoons olive oil

1 tablespoon minced garlic

Salt and pepper to taste

Herbs of choice (try thyme, sage, or rosemary)

Optional toppings: roasted pumpkin seeds or fresh herbs

Directions:

Heat the Dutch Oven: Place your PRO IQ 6.5 Qt Dutch Oven over medium heat.

Sauté aromatic:. Add olive oil and garlic; cook 1–2 minutes until fragrant.

Add vegetables: Stir in butternut squash and onion; sauté until the squash begins to brown and the onion turns translucent.
